Throughout the countless methods to prepare walleye and other gamefish, I look for recipes that are quick, simple, and taste great. Over the years, I have tweaked this recipe into a very delicious simple way to prepare your favorite catch.
Foil Wrapped Walleye
– 1 pound boneless/skinless walleye fillets
– 4 tbsp salted butter
– 4 garlic cloves (minced)
– 8 thin lemon slices
– 2 tbsp fresh chopped parsley
– 1 tsp red pepper flakes
– salt and pepper to taste
– 4 one foot squares of aluminum foil
Heat your grill to high heat, or prepare the hot coals of a campfire. Start by seasoning the fish fillets with salt, pepper, and red pepper flakes on both sides. Set fish onto the 4 individual foil sheets in roughly 4-ounce portions. Add 1 tbsp of butter, 2 lemon slices, 1 clove of minced garlic, and a pinch of freshly chopped parsley to each foil/fillet packet and seal tightly.
Place the foil packets on the grill or right onto the campfire for roughly 10 minutes depending on the thickness of your fillets. Remove from the heat, and remove from the foil package. Serve with vegetables and/or starch of your choice (thinly sliced potatoes can be wrapped in foil with the same recipe and cooked in a similar fashion to make a tasty side dish).
